Welcome back to another week of locally grown and made products. All the farmer’s markets are now open in Rutherford County. Now all your meals can be from local farmers.

Our first sighting of squash comes from Flying S Farms who has also added some new lettuce to the Market. You will still find lots of greens and lettuces on the Market.

Wedge Oak Farm has added duck legs and wings to their offerings.

The Market is back open today. June arrives this week and we are continuing to see more late spring and summer vegetables and herbs. There is still time to start a home garden and plenty of plants are available.

Chef Jenny is taking a break this week to restock her inventory.

It is now grilling season and we have plenty of meats and poultry from Wedge Oak Farm and West Wind Farms to satisfy your needs.

It’s Memorial Day weekend and we honor those who have given their lives in service to our Nation. As we pay tribute to the brave men and women who died for our freedom, we also honor those who are defending our liberties around the world today.

Alfresco Pasta returns this week after a short break.

Botanical Harmony is back with her skin care products.

More produce keeps getting added to the Market. Erdmann Farm has brought arugula back to the Market. Frontier Family Farm has early tomatoes this week. Rocky Glade Farm, Flying S Farms and others bring several varieties of lettuce and greens. In addition to his artisan breads, Double Star Bar Farms has added tatsoi, an Asian green,to the Market.

The recipe this week comes from an email I received this week from Food 52.com and uses many products you can find on the Market. RunawaySpoon from Memphis is the author.

Makes 6 skewers

Garlic Scape Satay

  • 1 bunch garlic scapes (about 6 scapes)
  • 1/2 inch piece fresh ginger, peeled
  • Juice of one lime
  • Handful of cilantro leaves
  • 10 mint leaves
  • A few Thai basil leaves (optional)
  • 1/4 cup soy sauce
  • 3 tablespoons sesame oil
  • 1 pound beef round, cut into evenly sized pieces

Make scape skewers by cutting the woody ends off of six scapes. Cut the ends into sharp points. Set aside. Cut three of the scape top pieces (about 8 inches) and the ginger into small pieces and drop in a blender. Add the lime juice, cilantro, mint and basil leaves and the soy sauce. Blend until a paste forms – the scapes are woody, so this takes a little work and scraping down of the sides of the blender. With the blender running, drizzle in the sesame oil and blend until smooth. Pour the marinade into a ziptop bag and add the beef cubes. Seal the bag and shake everything around to coat the beef. Refrigerate for several hours, turning once or twice. When ready to cook, heat the grill or a grill pan to high heat. Thread the beef onto the scape skewers. If needed, you can cut a small slit in each beef chunk to slide the skewer through. Grill the skewers until the beef is cooked through, about 10 minutes

Garlic Scape Satay Sauce

  • 3 eight-inch pieces garlic scapes
  • 1 1/2 cups creamy peanut butter
  • 1/2 cup coconut milk
  • 3 tablespoons water
  • 3 tablespoons fresh lime juice
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon hot sauce
  • 3 garlic cloves, minced
  • 1/4 cup fresh chopped cilantro

Cut the scapes into small pieces and place in a blender. Add the remaining ingredients and blend until smooth. Serve with Garlic Scape Beef Satay Skewers

Market News

The Market is back open this morning and produce is starting make a bigger appearance. New varieties of lettuce are available as well as an abundance of other greens. Garlic scapes have arrived too.

The weather has been consistently warm and if you are interested in starting a home garden, we have plenty of different plants that are perfect for anyone to grow. Now is the time to get your growing.

Strawberry Sweet Treats – this special treat was made especially for the Franklin Farmer’s Market strawberry festival. It’s a delightful mix of toasted sunflower, pumpkin, and poppy seeds that are sweetened with freeze dried strawberries, agave, and coconut sugar. From Linda with Dogwood Valley Greenhouse

We have only one succulent planter and one windowsill herb garden left, so get yours soon! We do have lots of beautiful hanging baskets as well, nice for your patio this summer. Pick up an Aloe vera plant to help when you get sunburn – because you know you will!! Our tomato plants didn’t like the warm temperature in the plant room and are taller than planned, but still very healthy, and now reduced in price. Among perennial friends flowering this week are the astilbes, beard-tongue, carnations, coral bells, pincushion flowers, small sedums, yarrows, gauras, and lavenders. The many types of ferns and herbs are all looking really nice. Gift certificates from Dogwood Valley Greenhouse are available in any denomination on the market.

Botanical Harmony is taking a break this week.

Cedar Thicket Farm is back on the market with fresh dill, oregano, cilantro and fresh or dried chamomile for tea. Three types of peonies: pink, white and the famous Sarah Barnhart.

Rainbow Hill Farm has added some kale and garden plants to the Market this week.

Strawberries are available in abundance this week from both Rainbow Hill Farm and Rocky Glade Farm. Rocky Glade Farm has also added carrots and kale to the Market.

Welcome to the first week of May. Mother’s Day is next Sunday. You can find many products from the Market as gifts for that special person.

The availability of produce is slowly increasing. Warmer temperatures this week will definitely assist that.

Reappearing this week are strawberries from Rainbow Hill Farm.

Flying S Farms added a new jam this week. It is a blueberry and strawberry flavor.

Chef Aaron with The Blue Porch is competing in todays Martha O’Bryan Community Food Bank Throwdown today at 4 pm. We wish him well.

Last night, Wedge Oak Farm hosted Pete Evans and the Moveable Feast. You can see some pictures from the event at their Facebook Page. Will we see them on PBS in the near future?

From Linda with Dogwood Valley Greenhouse

As promised, we have listed our beautiful planters, baskets, and windowsill herb gardens for Mother’s Day, which will be this coming Sunday! We also still have lots of tomato plants and a few bell peppers left. These plants in gallon pots are large and strong and ready to set into your garden. We also have several new perennial friends flowering this week, notably astilbe, beard-tongue, pincushion flower, yarrows, gauras, and lavenders. The many types of ferns and herbs are all looking really nice. Another great gift idea for Mother’s Day is a gift certificate from Dogwood Valley Greenhouse, available in any denomination on the market.

It is hard to believe we have come to the end of April. More products keep appearing from our vendors each week. Strawberries from Rocky Glade Farm have been ripening in an unpredictable manner so will be available again at pick up on a first come, first serve basis.

Flying S Farms has restocked there popular 7 Grain Sourdough bread.

Botanical Harmony Farm has restocked many of her items. Here is a condensed message from Tracey:

Botanical Harmony Farm is prepping for another great market season and have many items restocked!

Several new items listed this week include:
Goat milk foaming liquid soap, simple organic ingredients, essential oils and our recipe. never a base! Right now we have Lavender, Orange Vanilla or Patchouli Cedar Mint but as we build stock of this wonderful hand and body soap, many choices will be available.

Thank you all for your continued support of our family business. We strive to include local ingredients such as our organically grown or wildcrafted plants, coffee from local roasters for soap and scrubs, grains and other supplies from small businesses!

Chicken with Sun-Dried Tomato Cream Sauce
Prep Time 10 minutes
Cook Time 40 minutes
Total Time 50 minutes
Yield 8 servings

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • Kosher salt and freshly ground black pepper, to taste
  • 3 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes, or more, to taste
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/3 cup julienned sun dried tomatoes in olive oil, drained
  • 1/4 cup freshly grated Parmesan
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 cup basil leaves, chiffonade

Instructions

  1. Preheat oven to 400 degrees F.
  2. Season chicken thighs with salt and pepper, to taste.
  3. Melt 2 tablespoons butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; set aside.
  4. Melt remaining tablespoon butter in the skillet. Add garlic and red pepper flakes, and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in chicken broth, heavy cream, sun dried tomatoes, Parmesan, thyme, oregano and basil.
  5. Bring to a boil; reduce heat and simmer until slightly thickened, about 3-5 minutes. Return chicken to the skillet.
  6. Place into oven and roast until completely cooked through, reaching an internal temperature of 175 degrees F, about 25-30 minutes.
  7. Serve immediately, garnished with basil, if desired.

The Market is back open this morning with a couple of farmers returning from their Winter hiatus. Rainbow Hill Farm returns with their Salad Bowl, which is a large bowl of young lettuce that can be picked and eaten fresh. The lettuce plants will regrow if watered and fertilized like any growing plant. Speaking of growing plants, White City Produce and Greenhouse returns this week with lots of plants available for your Spring Garden. You will find cabbages, cucumbers, peppers, tomatoes and squash plants for a perfect garden.

Farmer Brown is transitioning from Winter to Summer lettuce amd will be off the Market for a couple of weeks.

Flying S Farms has restocked the supply of Almost Seedless Blackberry Jam and added to her listing of cakes.

Rocky Glade Farm brings a new Asian Green to the Market. They still have strawberries but quantities wil not be known in time for ordering. Watch for them this Wednesday at pick up.

Tomato and bell pepper plants are now available in gallon pots, large and strong and ready to transplant. Dogwood Valley Greenhouse has four varieties of tomatoes and three of peppers this year. The herbs and hanging baskets all look great as well. We also have several new perennial friends flowering this week, as well as most of the ones listed the previous two weeks. New this week are coral bells and scabiosa, as well as several varieties of ferns and euonymous or “burning bush.” Don’t forget our beautiful planters for Mother’s Day! Purchase or reserve your one-of-a-kind planter now before they are gone.

Welcome back to another week of local products. Produce is slowly appearing on the Market. due to the cold winter, we are still a couple weeks away from more varieties becoming available. However, Rocky Glade Farm has the first offering of strawberries this week. West Wind Farms has sliced ham and chicken available this week. Sicilian Bratwurst with Lemon and Orange is a new product from them. Chef Jenny has a new seasoning today. Tur-miracle Seasoning which blends sunflower seeds with turmeric, fennel seeds, cumin seeds, dehydrated onion, and sea salt.

From Dogwood Valley Greenhouse

This strange spring weather continues, resulting in all the spring perennials blooming at the same time. The woodland and sun phlox, columbine, coreopsis, vinca, and catchfly are still glorious. Joining them in bloom this week are the astilbes, early carnations, Sweet Williams (dianthus), Foam Flower & Jacob’s Ladder, as well as a few early azaleas. You can definitely set these perennials in your garden now, although I would wait a couple more weeks to add any annuals you might want. We also have lots of different herbs and several nice varieties of hanging baskets for your summer porch or patio.

We will soon have tomato and pepper plants in several varieties. It’s a bit early to plant them now, but you are welcome to email me at tnhomeschooler@yahoo.com for a list of varieties and to reserve your vegetable plants.

The Market is back open this chilly morning with a wide variety of locally grown and made products. Healthy Harvest Bread is having to take a short break. Hopefully they will return soon.

Alfresco Pasta continues to add products to the list of items. This week there are some cheese dips. You will find them under Cold Salads and Dips.

Now is the time to start planning your perennial and annual garden, Dogwood Valley Greenhouse has a variety of plants for you.

Japan Genmaicha “popcorn” tea, Earl Grey Crèam Black tea and Hazelnut Caramel Creme Rooibos are now back in stock as well. Enjoy!
