Ground Beef Gyro Meatball Lettuce Wraps with Tzatziki and Tomatoes

On my quest to find recipes from products sold on the Market, here is one that can be eaten most of the year from Yummly and Kalyn’s Kitchen. This recipe calls for Tzatziki which can be bought or homemade. A recipe for homemade sauce can be found here –
The recipe also calls for head lettuce. We have several kinds of bibb lettuces that I think will work too.

Kale Soup (Caldo Verde)

I first encountered a recipe similar to this called Caldo Gallego in The Ultimate Pressure Cooker by Tom Lacalamita. However that recipe was Spanish. I have made enough changes in the recipe that I consider this version my own. It is a hearty, nourishing soup that is delicious any time of the year. My understanding is that it is the national dish of Portugal.
