Summer Succotash
A recipe provided by Catherine from Flying S Farms for her CSA customers.
Ingredients
- 1 1/2 cup onion, chopped
- 1 cup zucchini, coarsely chopped
- 3 cups corn
- 1 cup green beans, blanched and cut in half-inch pieces
- 1 cup tomatoes, coarsely chopped
- 2 tsp kosher salt
- 1/4 tsp ground black pepper
- 3 TBSP basil, coarsely chopped
- 3 TBSP cilantro, coarsely chopped
- butter (for sautéing)
Instructions
- 1In a large skillet or saucepan over medium-high heat, sauté onion in butter until soft, about 2 minutes.
- 2Add chopped zucchini, and sauté 3 minutes.
- 3Stir in corn, green beans and tomatoes.
- 4Add salt, pepper, basil and cilantro.
- 5Heat until mixture is hot.
