Baba Ganoush

My Persian friend Sima introduced me to this easy, delicious appetizer, a dip that is served with toasted pita bread or crackers. It can be stored in a tightly covered dish in the refrigerator for several days.

Eggplant is a wonderfully nutritious vegetable, with beneficial effects on blood pressure, heart, blood vessels, circulation, and many other physical factors. Everything in this recipe is good for you, and not many calories.

Cajun Chicken and Okra

Chestnut Stuffing for Vegetarians

I have modified Martha Stewart’s original version by substituting vegetarian broth for chicken broth. I will be making the modified version for my vegetarian daughter this Thanksgiving. The proportions can easily be changed according to the number of vegetarian people to be served.

Chicken Soup with Baby Bok Choy

This is a variation of my standard chicken soup recipe with baby Bok Choy added at the end. I make large batches of soup and freeze it for future use. Makes a quick and nourishing meal when I don’t have time to cook.

Other variations of this soup: 1) omit bok choy and sdd 2 cups of peeled tomatoes, 1 chopped green pepper, and 2 or 3 cups of sliced okra.

2) Same as variation 1, but substitute chunks of zuccini and yellow squash for Okra.

Easy Roasted Eggplant

Eggplant can be roasted whole, with slit in skin to prevent bursting. The skin is discarded, but be sure to retain the juice of the eggplant. Eggplant can also be sliced lengthwise and roasted. Either method retains the food value and flavor with few or no added calories.

Whole roasted can be scooped out to make a casserole (see separate recipe) or to make baba ganoush, a Middle Eastern dip that is delicious with pita bread or crackers. (See separate recipe.)

On my quest to find recipes from products sold on the Market, here is one that can be eaten most of the year from Yummly and Kalyn’s Kitchen.
