Update from Carole’s Herbs (CS3 We have carob power balls, two flavors of shrub concentrate (drinking vinegars), and flowers!

Our carob balls are handmade, with raisins and astragalus. Carob tastes a little like chocolate, is Nutrient-Dense, low in calories, and a good source of calcium.

Try a gut-healthy Ginger-Fig or Wolfberry Mint shrub/tonic for great taste combined with nutritious ingredients. Use them as a salad dressing poured over your choice of salad greens or microgreens, or mixed with water for a delicious and refreshing drink.

The field daisies are blooming brightly — get you a dozen to brighten your home! The bachelor buttons (cornflowers) are also showing off. Bachelor Buttons are edible and medicinal, so you can “recycle” them after they are finished blooming! Make a bouquet or an edible centerpiece.

News from The Manager: Can you believe it will be June 1st…tomorrow! Several local area Farmers Market are open or planning to open soon. Several of those market have restriction before entering their market area. Our On-line Farmers Market only restriction is you have 2 days to place your order at your leisure from home or work.

Several of our Growers have been struggling over the past month getting their crops in due to the unbelievable amount of rain we’ve all had. Some items might be a littler later than others coming in but I’m expecting some wonderfully delicious items coming soon.

News from Our Growers:

Farrar Farm LLC: taking a short break this week, will return next week with more delicious cuts of our Pasture Raised Beef.

Trinity Rose Oberhasli Dairy Goats:
Milk, Cheese; Garlic Dill, Spicy Italian, Kefir available this week, our Goat Ladies are back in business, more selections coming soon.

Sow’s Ear Piggery: has posted some additional pork products this week, including two Boston Butts (a summer time BBQ favorite), two tenderloins (a prized cut), and 3-pound packages of chops (these are the last 3 packages of chops we will have until late June!).

In addition, we still have quantities of pork stew meat, pork cutlet, shoulder steaks, ground pork, and fresh ham steaks (these are simply thin cuts from back leg of the pig. Brown in a skillet, cover with some liquid and seasoning. Simple!).

As always, our pork is Non-GMO fed, no antibiotics or any other additives.
SPECIAL NOTE: We have two large pork bellies (for cooking as is or making bacon). If anyone is interested, please shoot me an email. With notice, I can cut into slabs of 2 or 3 pounds if anyone is interested. I will inform you when the listing will post in the future.

Rainbow Hill Farm: It is never to late to get your garden or containers growing from the selections of our seedlings. They are delivered in Peat Pots, just drop them in the ground and the soil is worm castings which gives them a great boost during the growing season.

Quarter Spring Farm: has a full selection of chicken cuts and products, including gorgeous multi-colored eggs, available on the market this week. Check back soon for updated soap scents and new patterns of reusable napkins.

RnR Farms: For this week we continue to have an abundance of the best naturally grown lettuces and greens in Middle Tennessee. Green leaf, red leaf, romaine of all colors, kale blend, and butterhead. And this week is a great week to be a lettuce connoisseur at Stones River Market. Because RnR Farms is having lettuce week!

Dogwood Valley Greenhouse: There are a very few tomato plants left, and I’ve added a couple of jalapeno peppers. First come, first served, as there will be no more vegetable plants this spring. I have lots of beautiful herbs, available both as plants and as ‘Fresh-cuts’. But if you need one I haven’t listed, let me know and I’ll try to find it.

The letter of the week is ‘S’: sedum, shasta daisy, and Stokesia aster! All will make the more sunny areas of your garden shine! I still have a good selection of perennials for shady areas too.

Flying S Farms: Lettuce, Swiss Chard, Kale, Garlic Scapes, Kohlrabi, Hakurei Turnips, Chinese Cabbage, Sour Dough Bread, Artisan Breads, Brownies, Several types of Friendship Breads..hint, they are excellent toasted or used for bread pudding or french bread for breakfast!

One jam restocked finally…Seriously Hot Strawberry, I promise more to come, going to jam this afternoon, so check back. Hint..Low Sugar Jams, Almost Seedless Strawberry…yes that’s right!, Our other Almost Seedless Jams…they are in high demand.

News from Our Growers:

Trinity Rose Oberhasli Dairy Goats: One of our most requested products is back online this week…this week we will have Chevre Cheese and Garlic & Dill Cheese available this week. Special request, please return any of the 1/2 gallon jars you may have received when you purchased milk from us….please!

Farrar Farm LLC: We have a new item this week. Teres Major Steaks! They are tender and flavorful and very economical, also great on the grill!

Carole’s Herbs (CS3 Farm): We have delicious microgreens, farmed and foraged salad greens, and gourmet herbal mustard.

Want to make sure your salad has some texture and taste? Add some microgreens. Delicious sunflower and speckled pea shoot micros will add nutrition to your smoothie, complement or replace your fresh lettuce salad, or garnish a vegetable or meat dish of your choice.

Remember foraged greens? Now we have Farmed and Foraged greens. This blend is a great tame & wild hybrid salad complement or substitute, it’s awesome on sandwiches, and it is quite delicious topping a burger or other sandwich.

We also (finally) have a new batch of our Scarborough Fair Mustard. The herbs include parsley, sage, rosemary, and thyme, and they give just about any sandwich, salad, or meat/vegetable dish a touch of heat backed by a delicious whole mouth wow.

Dogwood Valley Greenhouse: We have restocked several varieties of tomato plants, just a few of each. When these are gone, I doubt if I will be able to restock. Most of the herbs are large enough to join your garden, and there will be a couple more added in the near future. If you need a particular herb, let me know and I’ll try to find it.

The astilbes are beginning to bloom in shade and part shade; the daylilies and Shasta daisies in sun and part sun. The ferns are finally getting large enough to be added to your garden, and I’ve included several varieties on the market. They, along with the foam flower and hostas, will really brighten your shady areas. The green sedum is now flowering, and its cheerful yellow star-shaped flowers will enhance the more sunny areas of a garden.

I have just one more Lettuce Bowl, and won’t be making any more this spring. This beautiful and tasty “living salad” can be yours if you act quickly!

Please note that I will be updating my quantities available of perennials and herb plants on Monday morning. If you’re looking for something in particular, please check back then.

Flying S Farms: Unfortunate news about our popular 7-Grain Sour Dough Bread, we unable to obtain the 7 grain berries from Montana Wheat Co. they are no longer making the grain mix! I will continue to look for another supplier.

Yes, I will keep trying to get our Jams and Jellies back on the market when we have 36 hours in a day haha!
Hang in there with me, they will be back I promise.

News from Our Growers:

RnR Farm: We are back on the market and have a ton of lettuce available this week! All of our cut, washed, and bagged varieties and for the first time lettuce by the head.

Lettuce by the bag for this week = Lettuce Blend, Romaine Trio, red leaf mix, and butterhead hearts.

Lettuce by the head = green leaf and red leaf.

All naturally grown using beyond organic methods.

And we also have a baby leaf kale mix.

Rainbow Hill Farm: Great to be back and start our season with ‘Live Plants’ for your home garden. Ranging from Tomato, Sweet and Hot Peppers, Cucumber, Eggplant, Melon Okra all delivered in biodegradable pots

Carole’s Herbs (CS3 Farm): We have fresh greens, herbal honey, and two flavors of hummus.

We have a few more heads of delicious red lettuce, some tatsoi (taste and consistency is somewhere between spinach and chard) and mustard greens. They aren’t ready yet, but we are also working on some micro greens.

We also have more of our tasty gourmet Apicius and Hot Thyme Red Wine Mustards. They give both meat and vegetables a light amount of heat backed by a delicious whole mouth taste.

Try our new toasted pine nut hummus or roasted red pepper hummus. They are delicious on breads, crackers, salads, or even soups (hummus is a great meat/protein alternative).

We also have herbal honey, tonics/shrubs, herbal teas, and traditional teas to brighten your day!

Flying S Farms: Unfortunately we will not have Artisan Breads available this week, ‘not enough hours in a day’ phrase fits us to a ‘T’…they will be back available soon. The Garlic Scapes are beginning to develop, considered a delicacy by chefs, they are milder than garlic bulbs. They can be cut or chopped and used in many dishes, great with stir-fry, sauteed or add into a most dishes that use garlic. Recipe for Garlic Scape Pesto 1 cup grated Parmesan cheese 3 Tbsp. fresh lime or lemon juice 1/4 lb. scapes 1/2 cup olive oil Salt to taste Puree scapes and olive oil in a food processor until smooth. Stir in Parmesan and lime or lemon juice and season to taste. Serve on bread, crackers or pasta.

Oakview Farm and Wedge Oak Farm are back this week after updating and restocking their inventory.

Mo’s Scrubs by Toya: we have restocked our super popular anti bacterial hand gel, named ‘TOUCH IT’, to the market. This hand gel is made with 91% alcohol and an essential oil blend that helps fight germs.

Quarter Spring Farm: Did you forget to get mom a gift? No worries. Quarter Spring Farm can help you out with one of our amazing goat milk soaps. And don’t forget a treat for mom’s dog. Raw chicken feet make a great snack for Fido, too.

Carole’s Herbs (CS3 Farm)We have fresh greens, gourmet mustard, and two flavors of hummus.

We have a few heads of delicious red lettuce! Our mustard greens are pushing through the spring weather craziness if you’d like a little bite in your greens. Our miner’s lettuce will be used in limited supply in our forage greens, which can not only be eaten as lettuce but can also be cooked like spinach.

We have more of our best/selling Apicius Mustard. It’s an ancient Roman hummus recipe with pine nuts and almonds. We also have some more of our Hot Thyme Red Wine Mustard.

Try our new toasted pine nut hummus or roasted red pepper hummus. They are delicious on breads, crackers, salads, or even soups (hummus is a great meat/protein alternative).

We also have herbal honey, tonics/shrubs, herbal teas, and traditional teas to brighten your day!

Dogwood Valley Greenhouse: we have tomato and pepper plants to replace the ones you lost this past weekend in the unexpected freeze. Since I don’t have a huge stock, if I run out or don’t have the variety you want, please message me your additional requests, and I will try to fill them. But please plan not to plant till the end of May. The weather has been unpredictable this year, with a long, cool spring (my daffodils lasted 2 weeks longer than usual!) which has kept the soil unusually cool. Tomatoes and peppers like nice warm feet for best growth, and will not really do much till mid-June anyway.

I also have a good variety of herb plants available, but with the same comments as above. I don’t have many of any one, but will be glad to try to restock what you’re looking for. Just drop me a note. I’m unlikely to have many more Fresh cut herbs for a while.

I also have some new perennials coming into bloom, notably the very early daylilies for sun and the astilbes for the shade garden. Surely you can find a spot for a couple of these beauties!

News From Our Growers:

Mother’s Day idea’s..Mo’s Scrubs, several items to pamper anyone with, JillianFaithArt will brighten anyone’s day! Mama D’s Bakery you can never go wrong giving Donuts or any of their wonderful items! Farrar Farm great meat choice to roast, grill, fry or bake. Flying S Farms jams and jellies are always wonderful to give as gifts or special occasions.Carole Herbs (CS3 Farm) Their tea selection havee great choices for gifting.

Wedge Oak Farm: we will be taking this week off from Stones River Market. We process chicken and hogs this week and will be back loaded with product next week.

Nom Noms Dog Treats: has the perfect Doggie Mothers Day gift – treats and toys. Not only are the treats gluten/wheat free, cruelty free, and deliciously nutritious but the packaging and toy are Mother Earth Friendly also. The braided rope doggie toys are durable and made from cotton. The reusable jar is air tight with a lid and band. No frustrating label to pick off since we used stock card and twine instead of a plastic sticker label. Reuse the jar over and over, and compost the label and twine. Each treat jar comes with 1 braided dog toy.

Carole Herbs (CS3 Farm): We have fresh greens, gourmet mustard, and a new hummus.

We have more forest greens and miners lettuce. Both are a nutrient-dense (filling) lettuce or spinach alternative/supplement, so they can be used for breakfast (smoothies/eggs), lunch (salads), and dinner (as a salad or side vegetable). We also have just a few bunches of mustard greens to add a kick to anything you eat (fresh or cooked). Our lettuce is in time-out while it grows, with more coming along fast.

We (finally) have a fresh new batch of our best/selling Apicius Mustard. It’s an ancient Roman recipe with pine nuts and almonds. You needn’t speak Latin to love it, but if you do feel free to share!

And speaking of pine nuts, try our new (and delicious) toasted pine nut hummus. It’s best on anything you can imagine, like breads, crackers, salads, or even soups (it’s made with garbanzo beans so it is a great meat/protein alternative).

We also have herbal teas, traditional teas, and a few herbal honeys to brighten your day!

Dogwood Valley Greenhouse: Strawberry hanging baskets are ready! They are a lot fuller than the early photo indicates, and they each have several early berries now ripe, for an immediate taste treat.

And a few of the larger tomato and pepper plants are ready! I will have more varieties of tomatoes in a couple weeks, as they were started pretty late and need a little more time to grow. But those who know me, know that I say wait till May 15 to plant vegetable plants, anyway, as the soil will be warmer and will hasten growth after planting.

Lettuce Bowls are back! Loaded with a variety of direct-seeded plants, they will make great-tasting cut-and-come-again salads for some time.

I still have a good selection of azalea bushes. Although they are no longer blooming, they will make a good green addition to your landscape, as you wait for next spring’s blooms.

The herbs are growing well, and from week to week I will have different Fresh Cuts and some live plants to sell. I listed a couple, but some are already sold out. I still have lots of Elderberry bushes, but when they are gone, they are gone for this year. Since it would be better for them to be transplanted before the summer heat arrives, you should plan to get yours soon.

Flying S Farms: Swiss Card, Pac Choy, Radishes, Green Garlic and Salad onions. Added Super Mini (6) and Mini (3) Artisan Boule think of them like small biscuits or rolls.

Oakview Farm: has fresh kale, mustard, arugula and a salad greens mix on sale this week. We also have a variety of fresh cut herbs: parsley, thyme, garlic chives and lemon balm. Our napa cabbage, which doesn’t like this warmer weather, is starting to head so we are selling the crunchy green leaves for your lettuce wraps, salads and stir fries.

Carole Herbs (CS3 Farm): We have chives, greens,and hummus, and a question.

Check out our chives for a nutritious and delicious onion flavor for omelettes, salads, or dinner meals. Chives contain a lot of vitamins, minerals, and antioxidants.

We have more forest greens and miners lettuce, as well as a few more heads of fresh-picked red and green lettuce available. Our miner’s lettuce is good as a lettuce or spinach supplement or alternative, so it can be added to salad or can be used cooked or sautéed with your choice of eggs, vegetables, or meat.

We also have a fresh new batch of red pepper hummus available, and if you haven’t had it, you haven’t lived. Well, at least not to the fullest!

Dogwood Valley Greenhouse: It seems as though everything in the greenhouse is starting to bloom at once. Here are a few highlights, but you will find more new things on the pages.

For shade or part shade: hostas, Siberian bugloss, Coral bells, some of the ferns, foam flower and its cousin foamy bells. These will all combine well with some of our many colors of Azaleas, which are still blooming well.

For sun or part sun: Columbine, Geraniums, Lambs ear, Penstemon, Pincushion Flower, white Salvia,Yarrow, and
Tradescantia.

All the phloxes are now in bloom, and all three are natives in this area. Do you know the differences? Creeping phlox (Phlox subulata) is often used in rock gardens and edgings in full or part sun. It’s a low plant to 6 inches that fills in empty spaces nicely. Phlox divaricata and P. stolonifera are both woodland plants which prefer partial shade. They are both quite a bit taller than P. subulata, around a foot tall in bloom.

The first of the “Garden in a Vase” carnations are here! These first bouquets will be mixed red and pink, but otherwise similar to the photo.

And the “Fresh cut” Herbs are beginning! This week we have available Lemon Balm and Chocolate Mint, with more to follow next week.

Flying S Farms: Pac Choy, Radishes, Green Garlic and Salad onions. Added Super Mini (6) and Mini (3) Artisan Boule think of them like small biscuits or rolls.

Oakview Farm: baby greens are starting to grow up! Our Salad Greens mix has different varieties of young Kale, Collards, and Lettuce greens and are a delicious base for a healthy salad. We also have turkey, duck and free range chicken eggs. If you haven’t tried a turkey egg, now’s the time! They are very rich; wonderful over-easy with toast or on a burger.

Quarter Spring Farm: We have several great smelling goat milk soap for you. With all the extra hand washing we are all doing, goat milk soap is a great alternative to help keep those hands moisturized. We have replenished our supply of chicken cuts and pieces, and will have some cuts available fresh this week. Don’t forget about Fido, we have lots of feet available as treats for your furry little buddy.

Carole’s Herbs (CS3 Farm): This week we have a fresh batch of Ginger Fig Shrub Concentrate, many fruit and nut options for Overnight Oats, and we still have some miners lettuce and forage greens available, as well as a few heads of red and green lettuce.

Our Ginger Fig Shrub Concentrate can be mixed with water for a delicious and refreshing drink or poured over your choice of salad greens. The figs and ginger root have nutritional value, as does the Apple Cider Vinegar and Tennessee Honey we mix it with.

Our ‘Dry Overnight Oats’ give you almost a week’s worth (6 servings) of breakfast that requires little in the way of preparation. Choose fruit options, seed/nut alternatives, and enjoy! Add Keifer, Yogurt, Milk, Herbal Honey, Pure Water or Shrubs.

Thanks to the cold, we have a bit more Miners Lettuce and Forage Greens. Both are super nutritious and great additions to or replacements for your everyday salad. We also have some Limited Edition Red and Green Lettuce. We started them early, and they have taken advantage of the covering and rain and are ready for eating.

News From Our Growers:

Quarter Spring Farm: is happy to announce that we are processing birds this week! We will have all of your favorite cuts and sizes available again. Any chicken orders this week will be fresh, since we will be processing on Tuesday. Don’t forget about our goat milk soaps. With all the extra hand washing we are all doing, goat milk soap is a great alternative to help keep those hands moisturized.

Mo’ Scrubs: has lots of great products to keep your skin hydrate while you’re safe at home!

Our lemon hand scrub is popular these days because of all the constant hand washing. “Lemonade” is packed with organic sugar to exfoliate your hands and a blend of oils that will leave them soft and hydrated.

If you’re suffering from allergies or sinus problems, try “Breathe Again,” a natural alternative to Vicks! This essential oil blend will open up your sinuses and it’s also great for nausea and migraines.

Don’t forget about our aromatherapy bath salts! Blends for everything from eczema to stress/anxiety.

Oakview Farm: has a delicious Baby Greens Salad Mix with Kale, Collards and Mustard greens; great for salads and more! We also have dried and fresh herbs to enhance your meals. And, of course, we still have turkey, duck and chicken eggs! If you struggle with getting the shells off of fresh hard boiled chicken eggs, try this trick: steam the eggs using a steamer basket for fifteen minutes instead of boiling, then put in an ice water bath for five minutes. Hope this tip helps!

Carole’s Herbs (CS3 Farm): We have a fresh batch of elderberry tonic, black gourmet salt, and we still have some leafy greens available.

Our elderberry tonic concentrate only takes a little each day to build and tone your immune system.

Add some exciting taste to omelets or your favorite dinner recipe. Our Black Hawaiian Salt will liven up your meals and give you some significant health benefits.

We also have at least a week’s more Miners Lettuce, Forage Greens, Red Pepper Hummus, Shrubs, and some brand new Honeys!

News from Some of Growers:

Welcome Emerald Acres located in Eagleville. She will be providing the market with flowers and later in the season produce. This week she has a beautiful bouquet of Ranunculus that will surely brighten your day during this quarantine time.

Carole’s Herbs (CS3 Farm): We have more Miners Lettuce, Forage Greens, Red Pepper Hummus, and some brand new Herbal Honeys!…..Want an alternative to your typical salad? Get our Miner’s Lettuce, full of Vitamin C, Vitamin A, and Iron. Our Forage Greens are tasty, nutrient dense, and quite delicious, too….. Try our new Spearmint Honey and Spring Tonic Honey, with Violets, Dandelions, and Orange Blossom Honey.

Mama D’s Bakery: We make donuts, cookies, breads, rolls, pies, cakes, muffins, danishes, scones and more. We use healthy fats such as avocado, coconut and olive oil and butter, and we sweeten with organic raw sugars, honey, and maple syrup.

Dogwood Valley Greenhouse: The 10" Lettuce Bowls, a great way to get your salad mix, are gorgeous! More perennials are blooming, including carnations, dianthus, creeping phlox, geraniums, and pincushion plants. Needing some new landscaping? Try our azaleas! For the herb garden, we have spearmint plants and creeping rosemary, with more coming. The tall variegated and dwarf Solomon’s seals will really brighten your wildflower garden.

Oakview Farm: We have fresh and dried herbs, along with turkey, chicken and duck eggs. If you haven’t tried a turkey egg, they are scrumptious! They have a big beautiful yolk; great on a burger or a biscuit. One turkey egg is about the size of three small chicken eggs and they only lay in the Spring. Get them while you can. We are waiting for our microgreens to grow to baby salad mix and our spinach to grow to maturity.

Wedge Oak Farm: has come up with a new, fresh Springtime sausage! Wedge Oak Farm pasture-raised pork, salt, pepper, wild onion, wine and hog casing.

Flying S Farms: Low Sugar Peachy Jam and Low Sugar Strawberry Jam is now available. Enjoy our Sour Cream or Buttermilk Biscuits with almost anything!
