Sow’s Ear Piggery: Just in from the Butcher! Pork cutlets, boneless loin roast, Boston butts, Tenderloin, bottom round roasts. USDA, non-GMO, non-corn/soy, free range pork. We will be adding more cuts next week.

Short Mountain Cultures: we are best known for making a wide range of small batch fermented foods and beverages such as sauerkraut, kimchi, coconut Kefir(non-dairy), tempeh (soy & soy free), water kefir and kombucha. SMC also offers a varied selection of organic bulk foods from their shop ranging from beans and grains to dried fruits and raw nuts. Also amongst many locally made/ sourced options are Hatcher Dairy Milks and Alchemy of Sol Soaps.

Mama D’s Bakery: Hi everyone! We have added Strawberry Swirl Bread, Raspberry Swirl Bread, and Apple Cinnamon Swirl Bread this week! We also have everything else available this week. We have Blueberry Muffins, Crusty French Bread, Organic White Wheat Bread, Mocha Muffins, Chocolate Swiss Roll, Cinnamon Rolls, Caramel Apple Cinnamon Rolls, Blueberry Lemon Yeast Rolls, Banana Bread and Pumpkin Bread(with the option of nuts or not), Bagels(plain, cinnamon-raisin, blueberry, and everything), Donuts(cake and yeast), Cream Cheese Danishes, Pies(chocolate fudge, pecan, chocolate chip pecan, pumpkin and sweet potato), Cookies, Granola and Protein Bars, Yeast Breads, Sourdough Breads, and Fruit Scones. Sassy Cassies: Our Special Sassy dish for April is a Chicken Cordon Bleu Casserole. We layered honey ham with chicken and a swiss cheese sauce, with an incredible buttery crust.

Quarter Spring Farm: Happy Easter everyone! We are celebrating the arrival of spring by dropping prices on our chicken eggs! The girls are so excited for the arrival of spring that they just won’t stop laying, so we are discounting our eggs this week. Be sure to check out our cute handmade cloth napkins and goat’s milk soap, too.

Carol’s Herbs (CS3 Farm): We have carrots, roasted red pepper hummus, ginger fig shrub concentrate, herbal honey, herbal tea, gourmet mustard, dried wild oyster mushrooms, and some winter salad mix.
Dogwood Valley Greenhouse: The greenhouse perennials think spring is here! Whether you have a sunny spot or a shady yard, we have some phlox for you! They are joined this week by a few other very early bloomers. Be sure to keep an eye on the listings, as they will be changing each week.

Body & Soul Teas: We offer teas for sipping and teas for soaking. Our herbal tea blends nourish and support the body and soul. Our most popular blend, Tennessee Sunshine, is a tribute to the place I have called home for the past 18 years. It contains hibiscus, rose, and mints which impart a sweet, tart taste. Valentine Family Farm: It feels great being back on the market with one of our most requested pickles. Our delicious Pickled Okra as well as our SPICY Pickled Okra. Pickled Okra are the most beautiful and subtly complex pickles you will ever have.

Flying S Farms: Thank you for your care and concerns during our absence on the Market. We are back with several selections items ranging from our Sour Dough Breads and Sweet Breads and Bars and of course Biscuits and Cornbread. Our delicious Chicken Eggs are available every week. Are you in a Jam? You can’t go wrong giving a jar of our Jams just to cheer someone’s day up. New this week ‘Burst of Berries Jam" Blueberries, Strawberries, Black Berries and Black Raspberries, it is ’BERRY GOOD! Warm up with our HOT Pepper Jams:…Ghostly Pear Jelly it is milder than or other pepper jams, Jalapeno Cowboy Candy, these all go well with our Cast Iron Skillet Cornbread’s they are great for spicing up many things! Christmas Jam (because it contains Fresh Cranberries + Strawberry) not just for Christmas its delicious anytime, Almost Seedless Black Raspberry and Wild Fox Grape. Comment from Manager: Thank you only seems like 2 small words but they are HUGE words with great impact to our great list of Growers that have came to my aide and Ben’s during our time of needs. I can not stress enough the benefits from the Teas, Tonics, Soup, prayers that have strengthen through all of this. As I slowly improve I will continue the Herbs and Salve that have gotten me through some rough evenings.

Sow’s Ear Piggery: Just in from the Butcher! Pork cutlets, boneless loin roast, Boston butts, Tenderloin, bottom round roasts. USDA, non-GMO, non-corn/soy, free range pork. We will be adding more cuts next week.

Sassy Cassies: has brought all our yummy side dishes back for Easter. And we have a special yeast roll for Easter morning — Carrot Cake. There are carrots in the dough, rolled up around golden raisin that have marinated in pineapple juice, combined with brown sugar and warm spices. A pecan-cream cheese icing completes theses.

Dogwood Valley Greenhouse: The very early perennial plants are coming to life very nicely. While many of them are not yet in bloom, it’s a very good time to plant them so you will be able to enjoy their whole bloom season. In bloom now is Mukdenia, the odd plant that blooms before its leaves emerge. Also the Jacob’s ladder, a couple of pincushion flowers, and Euphorbia are blooming. More perennials will be sure to burst forth in color next week! The flowering almond is a beautiful small shrub which adds to the early spring display. If you are looking for a houseplant, I have also added several African violets back to the market this week as well. While the yellow and white daffodils have finished their show, the later doubles and multi-flowers should be doing well this week. If you’d like to return your vase and/or packing box, I will be glad to recycle them.

Carole’s Herbs (CS3 Farm): We have roasted red pepper hummus, ginger fig shrub concentrate, herbal honey, herbal teas, mustard, dried wild oyster mushrooms, lettuce, Kale and some more winter salad mix.

Our pickles include seasonal and locally wild-crafted ingredients including industrial hemp of the Finola variety. We personally grew this hemp as part of the Tennessee Department of Agriculture Pilot program. We carefully place these ingredients in the jar to display their beauty. The combination of these ingredients pickled together creates a flavor that is subtly complex like no other. Our pickles are hand made in small batches and are produced in Murfreesboro, Tennessee. We recommend ordering more than one jar. This is because many of our first time customers struggle with purchasing one jar and finishing its contents on the way home. As the seasons change we will update the ingredients. All of the ingredients are edible. RnR Farm: Along with several of our delicious lettuce varieties we have a special treat this week…Turkey Eggs:
These are pasture-raised turkey eggs. Turkey eggs are almost exactly the same as chicken eggs in texture and taste, but each egg is almost twice as big as the average chicken egg. We have one turkey hen that was pardoned from Thanksgiving last fall, and she has started laying eggs as the weather has warmed. So we are selling these very limited eggs by the half dozen. Turkeys lay much fewer eggs than chickens, and they usually only lay in the Spring. So this is a rare treat indeed. Our turkey hen is fed locally sourced non-GMO feed and resides in a turkey tractor that allows her to constantly forage on fresh pasture. Since most turkeys are processed in the fall and never get to laying age, this may be your only opportunity to get fresh, non-GMO turkey eggs.

Barefoot Acres Herbs: This week I will be working on lymphatic cleanse salve and some lotion bars.

Sassy Cassies: We have some delicious Easter side dishes the next two weeks. We have cornbread casserole, sweet potato casseroles, squash casserole, bacon braised brussels sprouts and more. Our soups will take a hiatus till Fall with exception of our chicken soups. They will remain for awhile, because everyone needs a little chicken soup in their lives, no matter the weather.

Valentine Family Farm: It feels great being back on the market with one of our most requested pickles. Our delicious Pickled Okra as well as our SPICY Pickled Okra.Pickled Okra are the most beautiful and subtly complex pickles you will ever have. Our pickles include seasonal and locally wild-crafted ingredients including industrial hemp of the Finola variety. We personally grew this hemp as part of the Tennessee Department of Agriculture Pilot program. We carefully place these ingredients in the jar to display their beauty. The combination of these ingredients pickled together creates a flavor that is subtly complex like no other. Our pickles are hand made in small batches and are produced in Murfreesboro, Tennessee. We recommend ordering more than one jar. This is because many of our first time customers struggle with purchasing one jar and finishing its contents on the way home. As the seasons change we will update the ingredients. All of the ingredients are edible. Short Mountain Cultures: we are best known for making a wide range of small batch fermented foods and beverages such as sauerkraut, kimchi, coconut Kefir(non-dairy), tempeh (soy & soy free), water kefir and kombucha. SMC also offers a varied selection of organic bulk foods from their shop ranging from beans and grains to dried fruits and raw nuts. Also amongst many locally made/ sourced options are Hatcher Dairy Milks and Alchemy of Sol Soaps.

Dogwood Valley Greenhouse:
Spring has sprung! Or is it still Christmas? The seasons are on a collision course at Dogwood Valley Greenhouse! This week we have a few pink and a couple of red Christmas cacti (technically Thanksgiving cacti, but no one really calls them that!) blooming again. These are not huge plants, but each one has at least half-a-dozen buds coming on. When given cool growing temperatures of 55-60F and not watered for a month, they will bloom multiple times in a year, but each bloom cycle will be less prolific. These plants will brighten your windowsill or plant area nicely.

And finally, the long-awaited daffodils are opening! If you need some bright yellow cheer on your dining table as badly as I do, grab one of these beauties! The early ones will last another week if the weather is not too warm. Then the later, multi-colored ones will bloom. Get yourself a now-and-later! And if you have a vase left over from last year, I will be glad to take it back.

Quail eggs are small, so three to four of them roughly equate to the serving size of one chicken egg.

For being so small, these eggs are surprisingly rich in nutrients.

Fungalicious: Recipe for this week..
Sherry and Brie Mushroom Bisque
Makes 8 Cups
1 Pound Oyster Mushrooms
2 cups Dry Sherry (Cooking Sherry Optional)
1-1/2 TBLS Unsalted Butter
1 Pound Brie Cheese Rind Removed and Cubed
½ C Minced Shallots
1 TBLS Freshly Squeezed Lemon Juice
2 TBLS Flour
4 C Beef Stock
1-3/4 C Half and Half
½ Tsp Freshly Ground Black Pepper
½ C Roughly Chopped Chives for Garnish
Kosher Salt and Freshly Ground Pepper to Taste
In a small saucepan reduce the sherry to 1 cup and set aside. In a medium sauce pan over medium high heat melt the butter and add the mushrooms, shallots and lemon juice and cook for 4 minutes, stirring constantly. Remove from heat and add the flour and stir until completely incorporated. Return the mixture to heat and add the beef stock and reserved sherry. Rias ether heat to high and bring to a boil. Reduce heat and simmer for 15 minutes. Add the brie, stirring until the cheese has melted. Add the half and half and pepper and continue to simmer without boiling for 5 minutes. Taste for salt and pepper. Use an immersion blender to bring to a final consistency. (A REGULAR BLENDER WILL WORK JUST USE CAUTION WITH HOT LIQUIDS) Ladle into separate bowls and garnish with
chives. Add some crispy bread and enjoy!!

QUAIL EGGS
Have you ever ate a quail egg, you don’t know what you are missing! Delicious in an omelet, egg salad, pudding or over easy.

Quail eggs are small, so three to four of them roughly equate to the serving size of one chicken egg.

For being so small, these eggs are surprisingly rich in nutrients.

One quail egg (9 grams) contains a significant chunk of your daily vitamin B12, selenium, riboflavin, and choline needs, along with some iron — all in a serving that contains only 14 calories.

Selenium and riboflavin are important nutrients that help your body break down the food you eat and transform it into energy. Selenium also helps ensure healthy thyroid function.

Enjoy our mushrooms with this weeks recipe:
Sautéed Oyster Mushrooms
Converting a mushroom hater into a mushroom enthusiast is easy when you give them a fork full of
perfectly cooked Oyster mushrooms. The main trick is to not to undercook the mushrooms and to make sure you salt them generously. Oyster mushrooms like long and slow heat and taste best when crisped slightly.
You will need:
One large cluster of Oyster mushrooms
1 tbsp butter
2 large garlic cloves minced
1 tbsp dried thyme
1 tsp of salt + more to taste
Fresh ground black pepper
1 or 2 tbsp heavy cream
Step One: Mince garlic. Melt the butter in a pan over medium heat. Roughly chop Oyster mushrooms and add to pan.
Step Two: Sauté until the mushrooms release their liquid (5-10 minutes) then add the garlic, thyme, and salt.
Step Three: Sauté until all of the liquid is cooked off and continue to sauté until mushrooms crisp in the pan. Crisping will take 15-20 minutes.
Step Four: Remove from heat, deglaze pan with heavy cream and season to taste!
You can also amend the recipe by adding 1/2 cup of dry white wine when you add the garlic or by adding 1 Tbs or so of madeira when you deglaze the pan. Rosemary, sage, parsley, or lovage all make fine substitutions or additions to the thyme.

Sow’s Ear Piggery:
We have added several new, whole cuts, including pork shoulders, whole belly, and whole boneless loin. Ground pork, sausage, and bratwursts are also available. As always, our pork comes from free-range, non-GMO, non-corn, non-soy pigs.

Carole Herb’s (CS3 Farm): We made it through the ‘snowapocolypse’ we have carob balls, roasted red pepper hummus, and ginger fig shrub concentrate, Hot Thyme Red Wine mustard, dried wild oyster mushrooms, and winter salad. Remember that our products will be on vacation next week, so stock up this week.

Sassy Cassies:
We have a new special this week. Free order of Ham and Swiss Sweet Potato rolls with the order of 2 casseroles or soups (or combination casserole/soup). They are good with soup, for breakfast, brunch or lunch. (6 rolls in an order) By request we will be adding larger size entries soon.

Air Fry Buttermilk Fried Mushrooms
This Buttermilk Fried Mushrooms recipe is about to revolutionize your vegetarian cooking. With fried oyster mushrooms and a crunchy coating, it tastes just like fried chicken!
Prep: 30 mins
Cook: 15 mins
Total: 45 mins

INGREDIENTS
2 heaping cups oyster mushrooms
1 cup buttermilk (Vegan Option; soy or almond milk with squeeze of lemon or splash of vinegar, it will not be as thick as buttermilk, you will not need as much)
1 1/2 cups all-purpose flour
1 tsp each salt, pepper, garlic powder, onion powder, smoked paprika, cumin
1 Tbsp oil*
INSTRUCTIONS
Marinate: Preheat air fryer to 375 degrees F. Clean mushrooms then toss together with buttermilk in a large bowl. Let marinate for 15 minutes.
Breading: In a large bowl combine flour and spices. Spoon mushrooms out of the buttermilk (save the buttermilk). Dip each mushroom in the flour mixture, shake off excess flour, dip once more in the buttermilk, then once more in the flour (in short: wet – dry – wet – dry).
Cook: Grease the bottom of your air fry pan well, then place mushrooms in a single layer, leaving space between mushrooms. Cook for 5 minutes, then roughly brush all sides with a little oil to promote browning. Continue cooking 5 to 10 more minutes, until golden brown and crispy-(or cooking spray) This will make 1 serving.

Sherry and Brie Mushroom Bisque
Makes 8 Cups
1 Pound Oyster Mushrooms
2 cups Dry Sherry (Cooking Sherry Optional)
1-1/2 TBLS Unsalted Butter
1 Pound Brie Cheese Rind Removed and Cubed
½ C Minced Shallots
1 TBLS Freshly Squeezed Lemon Juice
2 TBLS Flour
4 C Beef Stock
1-3/4 C Half and Half
½ Tsp Freshly Ground Black Pepper
½ C Roughly Chopped Chives for Garnish
Kosher Salt and Freshly Ground Pepper to Taste
In a small sauce pan reduce the sherry to 1 cup and set aside. In a medium sauce pane over medium high heat melt the butter and add the mushrooms, shallots and lemon juice and cook for 4 minutes, stirring constantly. Remove from heat and add the flour and stir until completely incorporated. Return the mixture to heat and add the beef stock and reserved sherry. Rias ether heat to high and bring to a boil. Reduce heat and simmer for 15 minutes. Add the brie, stirring until the cheese has melted. Add the half and half and pepper and continue to simmer without boiling for 5 minutes. Taste for salt and pepper. Use an immersion blender to bring to a final consistency. (A REGULAR BLENDER WILL WORK JUST USE CAUTION WITH HOT LIQUIDS) Ladle into separate bowls and garnish with chives. Add some crispy bread and enjoy!!
