Ingredients

  • 4 yellow squash
  • 4 zucchini squash
  • 4 tomatoes, quartered
  • 2 onions, quartered
  • 8 oz fresh mushrooms, sliced
  • 1 1/2 cup shredded parmesan cheese
  • 2 Tbsp italian seasoning

Instructions

    Toss all ingredients together and place in a 9- by 13-inch dish. Microwave on High until vegetables are of desired tenderness, or bake at 350 degrees until desired tenderness.
