I have recently started using Pinterest and found this recipe and wanted to share it.

Ingredients

  • 1 tbsp Extra virgin olive oil
  • 1 medium Onion, diced
  • 3 Carrots, peeled and shredded
  • 1 Broccoli, lg head, trimmed, washed and shreddded
  • 2 cups kale, ribs removed, washed and shredded
  • 3 cups Veggie broth, low sodium
  • 1 tsp Black pepper
  • 1 tsp Paprika
  • 1 tsp Sea salt
  • 1 tsp Red pepper flakes (optional)
  • 1 cup quinoa

Instructions

    Using a food processor, shred onion, carrots, broccoli and kale

    In a medium saucepan, saute shredded veggies in olive oil 2-3 minutes
  3. 3
    Add quinoa, broth and spices
  4. 4
    Cover and bring to a boil
  5. 5
    Reduce heat to med-low, and simmer for 12-15 minutes, until liquid is absorbed
  6. 6
    Serve warm or cold
