Vegetable Quinoa Pilaf
I have recently started using Pinterest and found this recipe and wanted to share it.
Ingredients
- 1 tbsp Extra virgin olive oil
- 1 medium Onion, diced
- 3 Carrots, peeled and shredded
- 1 Broccoli, lg head, trimmed, washed and shreddded
- 2 cups kale, ribs removed, washed and shredded
- 3 cups Veggie broth, low sodium
- 1 tsp Black pepper
- 1 tsp Paprika
- 1 tsp Sea salt
- 1 tsp Red pepper flakes (optional)
- 1 cup quinoa
Instructions
- 1Using a food processor, shred onion, carrots, broccoli and kale
- 2In a medium saucepan, saute shredded veggies in olive oil 2-3 minutes
- 3Add quinoa, broth and spices
- 4Cover and bring to a boil
- 5Reduce heat to med-low, and simmer for 12-15 minutes, until liquid is absorbed
- 6Serve warm or cold
